- 1 lb. Italian sausages (Gouda and apple ones are good)
- 2 bell peppers cut into 1" strips
- 1-1/2 lbs. red potatoes cut into bite-sized pieces (4-5 potatoes)
- 1 T. olive oil
- 1 t. garlic powder
- Salt and pepper to taste
- Position racks to split oven into 1/3's .
- Heat oven to 500 degrees.
- Line 2 rimmed baking sheets with foil. Spray foil with cooking spray.
- Place whole sausages, cut peppers, potatoes, oil, and seasonings into medium-large bowl. Toss to coat with oil and seasonings.
- Divide ingredients between two prepared baking sheets.
- Roast 10 minutes. Toss again. Switch top and bottom pans in oven. Roast 10 minutes more or until potatoes are tender.
