Roasted Sausages, Peppers, and Potatoes

  • 1 lb. Italian sausages (Gouda and apple ones are good)
  • 2 bell peppers cut into 1" strips
  • 1-1/2 lbs. red potatoes cut into bite-sized pieces (4-5 potatoes)
  • 1 T. olive oil
  • 1 t. garlic powder
  • Salt and pepper to taste
  1. Position racks to split oven into 1/3's .
  2. Heat oven to 500 degrees.
  3. Line 2 rimmed baking sheets with foil. Spray foil with cooking spray.
  4. Place whole sausages, cut peppers, potatoes, oil, and seasonings into medium-large bowl. Toss to coat with oil and seasonings.
  5. Divide ingredients between two prepared baking sheets.
  6. Roast 10 minutes. Toss again. Switch top and bottom pans in oven. Roast 10 minutes more or until potatoes are tender.
To serve: cut sausages into slices. Toss. Serve.
